Ingredients:
- 3 large eggs (150g)
- ¾ cup granulated sugar (150g)
- 1 teaspoon pure vanilla extract (5ml)
- 1 cup all-purpose flour (120g)
- ½ teaspoon baking powder (2g)
- ¼ teaspoon salt (1g)
- ½ cup icing sugar for dusting (60g)
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, separate the egg yolks and whites.
- Whisk egg yolks with granulated sugar until light and fluffy; add vanilla extract.
- In another bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the yolk mixture.
- Sift together flour, baking powder, and salt; fold into the batter gradually.
- Transfer the batter to a piping bag and pipe 3-inch lines on the baking sheets.
- Dust with icing sugar and let rest for 10 minutes.
- Bake for 12-15 minutes until light golden brown.
- Allow to cool completely before serving.
