Ingredients:

  • 3 large eggs (150g)
  • ¾ cup granulated sugar (150g)
  • 1 teaspoon pure vanilla extract (5ml)
  • 1 cup all-purpose flour (120g)
  • ½ teaspoon baking powder (2g)
  • ¼ teaspoon salt (1g)
  • ½ cup icing sugar for dusting (60g)

Instructions:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, separate the egg yolks and whites.
  3. Whisk egg yolks with granulated sugar until light and fluffy; add vanilla extract.
  4. In another bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the egg whites into the yolk mixture.
  6. Sift together flour, baking powder, and salt; fold into the batter gradually.
  7. Transfer the batter to a piping bag and pipe 3-inch lines on the baking sheets.
  8. Dust with icing sugar and let rest for 10 minutes.
  9. Bake for 12-15 minutes until light golden brown.
  10. Allow to cool completely before serving.
