Ingredients:
- 1 (15.25 ounce / 432g) box yellow cake mix (Duncan Hines, Betty Crocker, or similar)
- 1 (20 ounce / 567g) can crushed pineapple, undrained
- 3 large eggs
- 1/3 cup (80ml) vegetable oil
- 1 teaspoon vanilla extract (5ml)
- 1/4 cup (60ml) reserved pineapple juice from the can (optional, for extra moistness)
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (120g) powdered sugar
- 2-3 tablespoons (30-45ml) milk (any kind)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour the 9x13 inch baking pan.
- In a large bowl, combine the yellow cake mix, undrained crushed pineapple, eggs, vegetable oil, and vanilla extract. Add reserved juice if using.
- Beat with an electric mixer until just combined. Avoid overmixing.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before frosting.
- While the cake is cooling, whisk together the melted butter and powdered sugar. Add milk, one tablespoon at a time, until the glaze reaches your desired consistency.
- Pour the glaze over the warm cake and spread evenly.
