Ingredients:

  • 1 (15.25 ounce / 432g) box yellow cake mix (Duncan Hines, Betty Crocker, or similar)
  • 1 (20 ounce / 567g) can crushed pineapple, undrained
  • 3 large eggs
  • 1/3 cup (80ml) vegetable oil
  • 1 teaspoon vanilla extract (5ml)
  • 1/4 cup (60ml) reserved pineapple juice from the can (optional, for extra moistness)
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (120g) powdered sugar
  • 2-3 tablespoons (30-45ml) milk (any kind)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour the 9x13 inch baking pan.
  2. In a large bowl, combine the yellow cake mix, undrained crushed pineapple, eggs, vegetable oil, and vanilla extract. Add reserved juice if using.
  3. Beat with an electric mixer until just combined. Avoid overmixing.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10-15 minutes before frosting.
  7. While the cake is cooling, whisk together the melted butter and powdered sugar. Add milk, one tablespoon at a time, until the glaze reaches your desired consistency.
  8. Pour the glaze over the warm cake and spread evenly.
