Ingredients:

  • 2 ripe mangoes (about 450g or 1 lb, peeled and diced)
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) water
  • 1 tablespoon lemon juice (15ml)
  • Pinch of salt

Instructions:

  1. Peel and dice the mangoes into small pieces.
  2. In a medium saucepan, combine mango pieces, sugar, water, lemon juice, and a pinch of salt. Bring to a gentle boil over medium heat, stirring occasionally.
  3. Remove from heat and let cool slightly. Transfer the mixture to a blender or use an immersion blender until smooth.
  4. Pour the blended mixture through a fine mesh strainer into a bowl or jug, pressing down to extract as much liquid as possible.
  5. Let the syrup cool completely before transferring it to a clean bottle or jar. Store in the refrigerator for up to 2 weeks.
