Ingredients:
- 2 cups all-purpose flour (250g)
- 1/2 teaspoon salt
- 1 teaspoon granulated sugar
- 1 cup unsalted butter, cold and cubed (226g)
- 1/4 cup ice water (60ml)
- 4 medium peaches, peeled and diced
- 1/4 cup granulated sugar (50g)
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions:
- In a large bowl, combine flour, salt, and sugar.
- Cut in cold butter using a pastry cutter until it resembles coarse crumbs.
- Stir in ice water gradually until the dough comes together.
- Shape the dough into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
- In a bowl, mix together diced peaches, sugar, cinnamon, lemon juice, and cornstarch. Set aside.
- On a floured surface, roll the chilled dough to about 1/8 inch (0.3cm) thick. Cut into squares (approximately 4x4 inches).
- Place a spoonful of filling in the center of each square. Fold the dough over to create a triangle and seal edges with a fork.
- Preheat the oven to 375°F (190°C). Place pockets on a baking sheet lined with parchment.
- Bake for 20-25 minutes until golden brown.
- Let cool for a few minutes before serving. Enjoy warm!
