Ingredients:
- 3 large ripe bananas (about 450g)
- 1 cup (240ml) vinegar (white or apple cider)
- 1/2 cup (100g) brown sugar
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon paprika (smoked or regular)
- Optional: 1 tablespoon chili sauce for heat
Instructions:
- Peel and slice the ripe bananas.
- In a saucepan, combine the sliced bananas, vinegar, brown sugar, salt, garlic powder, onion powder, black pepper, and paprika.
- Cook over medium heat, stirring occasionally, until the bananas soften and the mixture bubbles (about 10 minutes).
- Use an immersion blender or transfer to a regular blender and puree the mixture until smooth.
- Return to the saucepan and simmer for an additional 10 minutes, allowing it to thicken.
- Adjust seasoning to taste and add optional chili sauce for heat, if desired.
- Let cool before transferring to a storage container.
