Ingredients:

  • 3 large ripe bananas (about 450g)
  • 1 cup (240ml) vinegar (white or apple cider)
  • 1/2 cup (100g) brown sugar
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika (smoked or regular)
  • Optional: 1 tablespoon chili sauce for heat

Instructions:

  1. Peel and slice the ripe bananas.
  2. In a saucepan, combine the sliced bananas, vinegar, brown sugar, salt, garlic powder, onion powder, black pepper, and paprika.
  3. Cook over medium heat, stirring occasionally, until the bananas soften and the mixture bubbles (about 10 minutes).
  4. Use an immersion blender or transfer to a regular blender and puree the mixture until smooth.
  5. Return to the saucepan and simmer for an additional 10 minutes, allowing it to thicken.
  6. Adjust seasoning to taste and add optional chili sauce for heat, if desired.
  7. Let cool before transferring to a storage container.
