Ingredients:
- 1/2 cup low-sodium soy sauce
- 1/3 cup coconut sugar
- 1 tbsp water
- 2 cloves garlic, smashed
- 1 tsp fresh ginger, minced
- 1 pinch black pepper
Instructions:
- Combine the soy sauce, coconut sugar, water, and aromatics in a small stainless steel saucepan.
- Stir over medium low heat until the sugar granules completely dissolve into the liquid. Note: Don't rush this, or you'll get sugar crystals in your sauce.
- Bring the mixture to a very gentle simmer.
- Cook for 8-10 minutes, stirring occasionally, until the liquid reduces by about 20% and begins to coat the back of a spoon.
- Remove from heat immediately once the sauce reaches a velvety, glossy consistency.
- Pour the mixture through a fine mesh strainer into a glass jar to remove the garlic and ginger bits. Note: This is what separates a home sauce from a masterpiece.
