Ingredients:

  • 2 cups cooked chicken, shredded (about 1 pound / 450g)
  • 1 cup shredded Cheddar cheese (about 100g)
  • 1 cup shredded Monterey Jack cheese (about 100g)
  • 1 tablespoon Taco seasoning
  • 1/2 cup sour cream (about 120g)
  • 1 tablespoon fresh cilantro, chopped (optional)
  • 4 large flour tortillas (10-inch / 25 cm)
  • 1 tablespoon olive oil or cooking spray for grilling

Instructions:

  1. In a mixing bowl, combine cooked chicken with taco seasoning and mix in sour cream and half of the cheese.
  2. Heat a large skillet over medium heat and add olive oil.
  3. Place 1 tortilla in the skillet. Spread half of the chicken mixture over the tortilla, sprinkle with additional cheese, and top with another tortilla.
  4. Cook for 3-4 minutes until the bottom tortilla is golden and crispy. Carefully flip and cook the other side for an additional 3-4 minutes until cheese is melted.
  5. Remove from skillet, let cool slightly, cut into wedges, and garnish with cilantro if desired.
