Ingredients:

  • 8 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup canned corn, drained
  • 1 large avocado, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup green onions, chopped
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1 tablespoon lime juice

Instructions:

  1. Heat a skillet over medium heat.
  2. Add the ground beef or turkey, cooking until browned, approximately 5-7 minutes.
  3. Drain excess fat, if necessary, and stir in taco seasoning with 1/4 cup water. Allow to simmer until thickened, about 2-3 minutes.
  4. In a large mixing bowl, layer the chopped romaine lettuce.
  5. Add cherry tomatoes, corn, diced avocado, and black olives.
  6. Spoon the cooked taco meat over the salad mix.
  7. Sprinkle shredded cheese and chopped green onions on top.
  8. In a small bowl, combine salsa, sour cream, and lime juice. Mix well until creamy.
  9. Drizzle the dressing over the salad just before serving, or serve on the side.
  10. Toss gently to combine (if desired) and enjoy!
