Ingredients:
- 8 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup canned corn, drained
- 1 large avocado, diced
- 1/2 cup black olives, sliced
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup green onions, chopped
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1/2 cup salsa
- 1/4 cup sour cream
- 1 tablespoon lime juice
Instructions:
- Heat a skillet over medium heat.
- Add the ground beef or turkey, cooking until browned, approximately 5-7 minutes.
- Drain excess fat, if necessary, and stir in taco seasoning with 1/4 cup water. Allow to simmer until thickened, about 2-3 minutes.
- In a large mixing bowl, layer the chopped romaine lettuce.
- Add cherry tomatoes, corn, diced avocado, and black olives.
- Spoon the cooked taco meat over the salad mix.
- Sprinkle shredded cheese and chopped green onions on top.
- In a small bowl, combine salsa, sour cream, and lime juice. Mix well until creamy.
- Drizzle the dressing over the salad just before serving, or serve on the side.
- Toss gently to combine (if desired) and enjoy!
