Ingredients:

  • 1 pound (450g) cooked lobster meat, roughly chopped
  • 2 tablespoons (30ml) mayonnaise
  • 1 tablespoon (15ml) finely chopped celery
  • 1 tablespoon (15ml) freshly squeezed lemon juice
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • Pinch of paprika (optional)
  • 2 New England-style top-split hot dog buns
  • 2 tablespoons (30g) unsalted butter, melted

Instructions:

  1. Gently combine the chopped lobster meat, mayonnaise, celery, lemon juice, salt, pepper, and paprika (if using) in a mixing bowl. Be careful not to overmix.
  2. Brush the outside of each roll with melted butter.
  3. Lightly toast the inside of the rolls in a skillet over medium heat for 1-2 minutes per side, until golden brown and slightly crispy.
  4. Spoon the lobster mixture evenly into each roll.
  5. Garnish with a sprig of fresh parsley (optional) and serve immediately.
