Ingredients:

  • 6 slices white bread
  • 4 slices cooked bacon, crispy
  • 1/2 cup mayonnaise
  • 4 oz (115g) sliced cooked turkey breast
  • 4 oz (115g) sliced cooked chicken breast
  • 1 medium tomato, sliced
  • 1/2 cup shredded lettuce
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. If not using pre-cooked bacon, cook bacon in a skillet over medium heat until crisp. Drain on paper towels.
  2. Toast the bread slices to your preferred level of doneness.
  3. Spread mayonnaise on two slices of toasted bread. Top with lettuce, tomato slices, salt, pepper, and bacon.
  4. Place another slice of toasted bread on top of the bacon. Spread mayonnaise on it. Add the turkey slices and chicken slices.
  5. Top with the remaining slice of toasted bread (plain side up).
  6. Insert toothpicks into each quarter of the sandwich to hold it together. Using a sharp knife, cut the sandwich diagonally into two or four triangles.
  7. Arrange sandwich triangles on plates with pickle spears and potato chips. Serve your club sandwich.
