Ingredients:

  • 1.5 kg (3.3 lbs) Maris Piper or King Edward potatoes, peeled and cut into evenly sized chunks (about 5cm/2 inch)
  • 2 tbsp (30ml) olive oil
  • 100g (3.5 oz) goose fat, duck fat, or vegetable oil
  • 1 tsp (5ml) sea salt
  • ½ tsp (2.5ml) black pepper
  • 2 sprigs fresh rosemary or thyme (optional)
  • 2-3 cloves garlic, crushed (optional)

Instructions:

  1. Place potato chunks in a large saucepan, cover with cold water, and add a pinch of salt. Bring to a boil, then simmer for 8-10 minutes, or until the edges are just starting to soften.
  2. Drain the potatoes thoroughly in a colander. Return them to the empty saucepan and shake vigorously to rough up the edges.
  3. Preheat oven to 220°C (425°F/Gas Mark 7). Add your chosen fat to the roasting tray and place it in the oven to heat up. The fat needs to be smoking hot.
  4. Carefully remove the hot roasting tray from the oven and quickly add the potatoes to the hot fat. Turn the potatoes to coat them evenly. Sprinkle with salt, pepper, and herbs (if using).
  5. Roast for 30 minutes. Then, turn the potatoes over and continue to roast for another 15-25 minutes, or until golden brown and crispy. This roasted potatoes recipe is really amazing.
  6. In the last 10 minutes of cooking, add the crushed garlic (if using).
  7. Remove from the oven and serve immediately, seasoned to taste.
