Ingredients:

  • 1-4 large russet potatoes (baking potatoes)
  • 1-2 tablespoons olive oil (15-30ml)
  • 1-2 teaspoons coarse sea salt (5-10ml)
  • Black pepper to taste (optional)

Instructions:

  1. Preheat oven to 400°F (200°C/Gas Mark 6).
  2. Scrub potatoes clean and dry them thoroughly. Poke several times with a fork or knife.
  3. Rub each potato with olive oil, then sprinkle generously with coarse sea salt and pepper (if using). Ensure the potato is evenly coated.
  4. Place potatoes directly on the baking sheet. Bake for 45-90 minutes, or until a fork easily pierces the center of the potato, and the internal temperature reaches 210°F (99°C). Turn potatoes halfway through for even cooking.
  5. For extra crispy skin, broil (grill) for the last few minutes, watching very carefully to prevent burning.
  6. Let cool slightly before handling. Serve immediately with your favourite toppings.
