Ingredients:
- 1-4 large russet potatoes (baking potatoes)
- 1-2 tablespoons olive oil (15-30ml)
- 1-2 teaspoons coarse sea salt (5-10ml)
- Black pepper to taste (optional)
Instructions:
- Preheat oven to 400°F (200°C/Gas Mark 6).
- Scrub potatoes clean and dry them thoroughly. Poke several times with a fork or knife.
- Rub each potato with olive oil, then sprinkle generously with coarse sea salt and pepper (if using). Ensure the potato is evenly coated.
- Place potatoes directly on the baking sheet. Bake for 45-90 minutes, or until a fork easily pierces the center of the potato, and the internal temperature reaches 210°F (99°C). Turn potatoes halfway through for even cooking.
- For extra crispy skin, broil (grill) for the last few minutes, watching very carefully to prevent burning.
- Let cool slightly before handling. Serve immediately with your favourite toppings.
