Ingredients:

  • 1 large egg
  • ½ tablespoon unsalted butter (7g) OR 1 teaspoon olive oil (5ml) OR cooking spray
  • Pinch of salt (about ⅛ teaspoon / 0.5g)
  • Pinch of freshly ground black pepper (optional) (about ⅛ teaspoon / 0.5g)

Instructions:

  1. Heat the non-stick skillet over medium-low heat. Add butter (or oil/spray) and let it melt and coat the pan evenly, without browning.
  2. Gently crack the egg into a small bowl (this helps avoid shell fragments).
  3. Carefully slide the egg into the skillet. Cook until the whites are mostly set but still slightly jiggly – about 2-3 minutes.
  4. Gently slide the spatula under the edge of the egg. Carefully flip the egg over.
  5. Cook for just 15-30 seconds (depending on desired yolk runniness) – just enough to lightly set the yolk's outer layer.
  6. Gently slide the over easy eggs onto a plate. Season with salt and pepper. Serve immediately.
