Ingredients:

  • 1 lb (450 g) flank or skirt steak
  • 1/3 cup (80 ml) fresh lime juice (about 3 limes)
  • 1/4 cup (60 ml) orange juice (about 1 orange)
  • 3 cloves garlic, minced
  • 1 jalapeño, finely chopped (optional for heat)
  • 1/4 cup (60 ml) fresh cilantro, chopped
  • 1 tsp (5 g) cumin
  • 1 tsp (5 g) smoked paprika
  • Salt and black pepper to taste
  • 8 small corn tortillas
  • 1/2 cup (50 g) white onion, finely chopped
  • 1/2 cup (15 g) fresh cilantro, chopped
  • Lime wedges for serving

Instructions:

  1. Combine lime juice, orange juice, garlic, jalapeño, cilantro, cumin, smoked paprika, salt, and pepper in a shallow dish. Add the steak, ensuring it's fully coated. Cover and refrigerate for 1-2 hours.
  2. Preheat your grill or grill pan to medium-high heat.
  3. Remove steak from marinade, letting any excess drip off. Grill for 5-7 minutes on each side, or until desired doneness.
  4. Remove steak from grill and let it rest for 5-10 minutes before slicing thinly against the grain.
  5. Lightly char tortillas on the grill for about 30 seconds on each side until warmed and pliable.
  6. Place slices of carne asada on each tortilla. Top with chopped onions and cilantro. Serve with lime wedges.
