Ingredients:
- 1 lb (450 g) flank or skirt steak
- 1/3 cup (80 ml) fresh lime juice (about 3 limes)
- 1/4 cup (60 ml) orange juice (about 1 orange)
- 3 cloves garlic, minced
- 1 jalapeño, finely chopped (optional for heat)
- 1/4 cup (60 ml) fresh cilantro, chopped
- 1 tsp (5 g) cumin
- 1 tsp (5 g) smoked paprika
- Salt and black pepper to taste
- 8 small corn tortillas
- 1/2 cup (50 g) white onion, finely chopped
- 1/2 cup (15 g) fresh cilantro, chopped
- Lime wedges for serving
Instructions:
- Combine lime juice, orange juice, garlic, jalapeño, cilantro, cumin, smoked paprika, salt, and pepper in a shallow dish. Add the steak, ensuring it's fully coated. Cover and refrigerate for 1-2 hours.
- Preheat your grill or grill pan to medium-high heat.
- Remove steak from marinade, letting any excess drip off. Grill for 5-7 minutes on each side, or until desired doneness.
- Remove steak from grill and let it rest for 5-10 minutes before slicing thinly against the grain.
- Lightly char tortillas on the grill for about 30 seconds on each side until warmed and pliable.
- Place slices of carne asada on each tortilla. Top with chopped onions and cilantro. Serve with lime wedges.
