Ingredients:

  • 1 lb ground beef (80% lean)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp Worcestershire sauce
  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, onion, garlic, egg, milk, salt, pepper, thyme, and Worcestershire sauce. Mix until just combined; avoid over-mixing.
  3. Transfer the meat mixture to the loaf pan, shaping it to fit snugly.
  4. Refrigerate the meatloaf for 30 minutes to help it hold its shape.
  5. In a small bowl, whisk together ketchup, brown sugar, vinegar, and mustard until smooth.
  6. Spread half of the glaze over the top of the meatloaf.
  7. Place the loaf in the oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C).
  8. During the last 10 minutes of cooking, spread the remaining glaze over the meatloaf for a glossy finish.
  9. Remove from the oven and let the meatloaf rest for 10 minutes before slicing.
