Ingredients:

  • ½ cup soy sauce
  • ¼ cup mirin
  • 1 tablespoon sugar
  • 1 tablespoon water
  • 1 teaspoon sesame oil
  • 4 large eggs

Instructions:

  1. Bring a medium saucepan of water to a boil. Carefully add the eggs and boil for 6-7 minutes.
  2. Prepare a bowl of ice water. Once cooked, transfer the eggs immediately to the ice bath to stop cooking.
  3. In a bowl, whisk together soy sauce, mirin, sugar, water, and sesame oil until the sugar dissolves.
  4. Once cooled, gently tap the eggs on a hard surface and peel under running water to help remove the shells easily.
  5. Place the peeled eggs in an airtight container or zip-top bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes.
  6. Remove the eggs from the marinade, slice in half, and enjoy with ramen or as a snack.
