Ingredients:
- 1 cup (226 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ½ cups (300 g) all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 3 oz (85 g) flavored Jello mix
- ¼ cup (50 g) granulated sugar (for coating)
- 1 tablespoon flavored Jello mix (for coating, optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well incorporated.
- In a separate bowl, whisk together the flour, baking powder, salt, and Jello mix.
- Gradually combine the dry ingredients into the wet mixture until a soft dough forms. Chill if the dough is too sticky.
- In a small bowl, combine the granulated sugar and extra Jello mix for rolling.
- Scoop tablespoon-sized portions of dough, roll into balls, and then roll in the sugar mixture.
- Place the cookies on prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
