Ingredients:

  • 1 cup (226 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups (300 g) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 3 oz (85 g) flavored Jello mix
  • ¼ cup (50 g) granulated sugar (for coating)
  • 1 tablespoon flavored Jello mix (for coating, optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and Jello mix.
  5. Gradually combine the dry ingredients into the wet mixture until a soft dough forms. Chill if the dough is too sticky.
  6. In a small bowl, combine the granulated sugar and extra Jello mix for rolling.
  7. Scoop tablespoon-sized portions of dough, roll into balls, and then roll in the sugar mixture.
  8. Place the cookies on prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow cookies to cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
