Ingredients:

  • 10 oz (280 g) tomatillos, husked and rinsed
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 bunch fresh cilantro, stems removed (about 1 cup packed)
  • 1-2 green jalapeño peppers, stems removed
  • ½ cup (60 g) roasted pumpkin seeds (pepitas)
  • 1 tsp (5 g) ground cumin
  • 1 tsp (5 g) dried oregano
  • ½ cup (120 ml) vegetable broth
  • Salt, to taste
  • 1-2 tbsp (15-30 ml) lime juice

Instructions:

  1. Prepare Ingredients: Husk and rinse the tomatillos, chop the onion, and mince the garlic. Remove cilantro stems and prepare jalapeños.
  2. Cook Vegetables: In a medium saucepan, combine tomatillos, onion, garlic, and jalapeños. Add enough water to cover, then bring to a boil. Cook until tomatillos are soft (about 10 minutes).
  3. Blend the Mixture: In a blender or food processor, add the cooked vegetables, cilantro, pumpkin seeds, cumin, oregano, and vegetable broth. Blend until smooth and creamy.
  4. Simmer the Mole: Transfer the mixture back to the saucepan and bring to a gentle simmer. Season with salt and lime juice to taste. Cook for about 15-20 minutes to allow flavors to meld, stirring occasionally.
  5. Serve: Use immediately or allow to cool and store in the refrigerator for up to a week. Serve over your choice of protein or veggies.
