Ingredients:

  • 1 pound ground beef (or turkey/chicken)
  • 1 can black beans, drained and rinsed (15 oz)
  • 1 cup corn kernels (canned or frozen)
  • 1 packet taco seasoning mix (1 oz)
  • 1 cup diced tomatoes (with juice)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 large bell peppers (about 200 g each)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Slice the bell peppers in half lengthwise and remove seeds. Brush with olive oil and season with salt and pepper.
  3. In a large skillet over medium heat, brown the ground meat until fully cooked. Drain excess fat.
  4. Mix in black beans, corn, taco seasoning, and diced tomatoes. Cook until heated through, about 5-7 minutes.
  5. Stir in half of the shredded cheese until melted.
  6. Fill each pepper half with the meat and bean mixture, pressing down gently to pack them.
  7. Place the stuffed peppers in a baking dish. Optionally, cover with aluminum foil to keep moisture in. Bake in the preheated oven for 25-30 minutes, until bell peppers are tender.
  8. Remove from the oven and sprinkle the remaining cheese over the top. Return to the oven for an additional 5 minutes, until cheese is melted and bubbly.
