Ingredients:
- 1 pound ground beef (or turkey/chicken)
- 1 can black beans, drained and rinsed (15 oz)
- 1 cup corn kernels (canned or frozen)
- 1 packet taco seasoning mix (1 oz)
- 1 cup diced tomatoes (with juice)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 large bell peppers (about 200 g each)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Slice the bell peppers in half lengthwise and remove seeds. Brush with olive oil and season with salt and pepper.
- In a large skillet over medium heat, brown the ground meat until fully cooked. Drain excess fat.
- Mix in black beans, corn, taco seasoning, and diced tomatoes. Cook until heated through, about 5-7 minutes.
- Stir in half of the shredded cheese until melted.
- Fill each pepper half with the meat and bean mixture, pressing down gently to pack them.
- Place the stuffed peppers in a baking dish. Optionally, cover with aluminum foil to keep moisture in. Bake in the preheated oven for 25-30 minutes, until bell peppers are tender.
- Remove from the oven and sprinkle the remaining cheese over the top. Return to the oven for an additional 5 minutes, until cheese is melted and bubbly.
