Ingredients:
- 1 lb sushi-grade yellowtail, diced into ½-inch cubes
- ¼ cup soy sauce, low sodium preferred
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp honey or agave syrup (optional)
- 2 green onions, thinly sliced
- 1 avocado, diced
- 1 small cucumber, diced
- 1 tsp sesame seeds
- Sea salt and freshly cracked black pepper, to taste
- Fresh cilantro or microgreens (optional)
Instructions:
- Dice the sushi-grade yellowtail into ½-inch cubes.
- In a mixing bowl, combine soy sauce, sesame oil, rice vinegar, and honey.
- Add diced yellowtail to the marinade and gently mix to coat.
- Fold in the sliced green onions, diced avocado, and cucumber.
- Refrigerate for at least 30 minutes to allow flavors to meld.
- Spoon poke onto a serving dish, sprinkle with sesame seeds, and garnish with cilantro or microgreens.
