Ingredients:

  • 1 lb sushi-grade yellowtail, diced into ½-inch cubes
  • ¼ cup soy sauce, low sodium preferred
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey or agave syrup (optional)
  • 2 green onions, thinly sliced
  • 1 avocado, diced
  • 1 small cucumber, diced
  • 1 tsp sesame seeds
  • Sea salt and freshly cracked black pepper, to taste
  • Fresh cilantro or microgreens (optional)

Instructions:

  1. Dice the sushi-grade yellowtail into ½-inch cubes.
  2. In a mixing bowl, combine soy sauce, sesame oil, rice vinegar, and honey.
  3. Add diced yellowtail to the marinade and gently mix to coat.
  4. Fold in the sliced green onions, diced avocado, and cucumber.
  5. Refrigerate for at least 30 minutes to allow flavors to meld.
  6. Spoon poke onto a serving dish, sprinkle with sesame seeds, and garnish with cilantro or microgreens.
