Ingredients:

  • 1 ½ cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 3 to 4 tbsp ice water
  • 2 cups fresh goumi berries, washed and stems removed
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon (optional)

Instructions:

  1. In a mixing bowl, combine flour, sugar, and salt.
  2. Cut in chilled butter using a pastry cutter or fork until mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until dough comes together. Chill in the refrigerator for 30 minutes.
  4. In a separate bowl, combine goumi berries, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon (if using).
  5. Gently mix until berries are evenly coated.
  6. Preheat your oven to 375°F (190°C).
  7. Roll out the chilled dough on a floured surface to fit your pie dish.
  8. Transfer dough to the pie dish, pressing it gently into the sides.
  9. Pour the goumi berry filling into the crust.
  10. Roll out any remaining dough for the top crust or create a lattice design.
  11. Cut slits for ventilation if using a full top crust.
  12. Bake the pie on a baking sheet for about 20 minutes, or until the crust is golden brown and the filling is bubbly.
  13. Allow the pie to cool for at least 15 minutes before slicing and serving.
