Ingredients:
- 4 ears fresh corn, husks and silks removed
- 2 tablespoons vegetable oil
- 1/2 cup mayonnaise
- 1/2 cup sour cream or Mexican crema
- 1/4 cup finely chopped cilantro
- 1/4 cup crumbled Cotija cheese, plus more for garnish
- 1 lime, juiced
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
Instructions:
- Brush corn with vegetable oil.
- Grill corn over medium heat, turning occasionally, until kernels are slightly charred and tender (about 15-20 minutes).
- In a medium bowl, combine mayonnaise, sour cream, cilantro, Cotija cheese, lime juice, chili powder, and garlic powder. Season with salt and pepper to taste. Whisk until smooth.
- While the corn is still hot, generously brush or spoon the sauce over each ear. This mexican street corn recipe is amazing.
- Sprinkle with additional Cotija cheese and chili powder, if desired. Serve immediately with hot sauce and lime wedges on the side.
