Ingredients:

  • 4 ears fresh corn, husks and silks removed
  • 2 tablespoons vegetable oil
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or Mexican crema
  • 1/4 cup finely chopped cilantro
  • 1/4 cup crumbled Cotija cheese, plus more for garnish
  • 1 lime, juiced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Brush corn with vegetable oil.
  2. Grill corn over medium heat, turning occasionally, until kernels are slightly charred and tender (about 15-20 minutes).
  3. In a medium bowl, combine mayonnaise, sour cream, cilantro, Cotija cheese, lime juice, chili powder, and garlic powder. Season with salt and pepper to taste. Whisk until smooth.
  4. While the corn is still hot, generously brush or spoon the sauce over each ear. This mexican street corn recipe is amazing.
  5. Sprinkle with additional Cotija cheese and chili powder, if desired. Serve immediately with hot sauce and lime wedges on the side.
