Ingredients:

  • 1 pound (450g) ground pork sausage, mild or spicy
  • 1/4 cup (30g) all-purpose flour
  • 3 cups (720ml) whole milk
  • 1/2 teaspoon (2.5ml) salt, or to taste
  • 1/4 teaspoon (1.2ml) black pepper, or to taste
  • 1 tablespoon (15ml) butter (optional)
  • 1/4 cup (30g) finely chopped onion (optional)
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Crumble the sausage into the skillet over medium heat. Cook, stirring occasionally, until browned and cooked through. Drain off excess grease, leaving about 2 tablespoons in the pan. If using onion, add it with the sausage and cook until softened.
  2. Sprinkle the flour over the cooked sausage in the skillet. Cook and stir constantly for 1-2 minutes, allowing the flour to absorb the sausage fat and create a roux.
  3. Gradually whisk in the milk, a little at a time, ensuring that each addition is fully incorporated before adding more. Continue whisking until the gravy starts to thicken and becomes smooth.
  4. Reduce the heat to low. Add the salt, pepper, and red pepper flakes (if using). Simmer gently for 5-10 minutes, stirring occasionally, until the gravy reaches your desired consistency. Add butter, if using, for added richness.
  5. Taste and adjust seasonings as needed. Serve hot over warm biscuits, toast, or your favorite accompaniment.
