Ingredients:
- 1 pound (450g) ground pork sausage, mild or spicy
- 1/4 cup (30g) all-purpose flour
- 3 cups (720ml) whole milk
- 1/2 teaspoon (2.5ml) salt, or to taste
- 1/4 teaspoon (1.2ml) black pepper, or to taste
- 1 tablespoon (15ml) butter (optional)
- 1/4 cup (30g) finely chopped onion (optional)
- Pinch of red pepper flakes (optional)
Instructions:
- Crumble the sausage into the skillet over medium heat. Cook, stirring occasionally, until browned and cooked through. Drain off excess grease, leaving about 2 tablespoons in the pan. If using onion, add it with the sausage and cook until softened.
- Sprinkle the flour over the cooked sausage in the skillet. Cook and stir constantly for 1-2 minutes, allowing the flour to absorb the sausage fat and create a roux.
- Gradually whisk in the milk, a little at a time, ensuring that each addition is fully incorporated before adding more. Continue whisking until the gravy starts to thicken and becomes smooth.
- Reduce the heat to low. Add the salt, pepper, and red pepper flakes (if using). Simmer gently for 5-10 minutes, stirring occasionally, until the gravy reaches your desired consistency. Add butter, if using, for added richness.
- Taste and adjust seasonings as needed. Serve hot over warm biscuits, toast, or your favorite accompaniment.
