Ingredients:

  • ½ cup apple cider vinegar
  • ¼ cup olive oil
  • 2 tablespoons maple syrup or agave nectar
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 4 medium carrots, peeled and sliced into thin matchsticks (about 3 cups or 300 g)
  • 2 tablespoons fresh parsley, chopped (optional as a garnish)

Instructions:

  1. In a mixing bowl, whisk together apple cider vinegar, olive oil, maple syrup, Dijon mustard, sea salt, and black pepper until well combined.
  2. Peel and slice the carrots into thin matchsticks.
  3. In a large storage container, add the sliced carrots and pour the marinade over them.
  4. Toss the carrots in the marinade until they are evenly coated.
  5. Seal the container and refrigerate for at least 30 minutes, allowing the flavors to meld.
  6. Before serving, stir well and garnish with fresh parsley if desired.
