Ingredients:
- ½ cup apple cider vinegar
- ¼ cup olive oil
- 2 tablespoons maple syrup or agave nectar
- 1 teaspoon Dijon mustard (optional)
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 4 medium carrots, peeled and sliced into thin matchsticks (about 3 cups or 300 g)
- 2 tablespoons fresh parsley, chopped (optional as a garnish)
Instructions:
- In a mixing bowl, whisk together apple cider vinegar, olive oil, maple syrup, Dijon mustard, sea salt, and black pepper until well combined.
- Peel and slice the carrots into thin matchsticks.
- In a large storage container, add the sliced carrots and pour the marinade over them.
- Toss the carrots in the marinade until they are evenly coated.
- Seal the container and refrigerate for at least 30 minutes, allowing the flavors to meld.
- Before serving, stir well and garnish with fresh parsley if desired.
