Ingredients:

  • 1 cup (90g) rolled oats (old-fashioned oats, not instant)
  • ½ cup (120ml) peanut butter (smooth or chunky, your preference)
  • ⅓ cup (80ml) honey (or maple syrup for a vegan option)
  • ¼ cup (60ml) semi-sweet chocolate chips (or dark chocolate, or dairy-free)
  • 2 tablespoons (30ml) ground flaxseed (optional, for extra nutrients)
  • 1 teaspoon (5ml) vanilla extract (optional, enhances flavour)
  • Pinch of salt

Instructions:

  1. In a large bowl, combine the rolled oats, ground flaxseed (if using), and a pinch of salt.
  2. Add the peanut butter, honey (or maple syrup), and vanilla extract (if using) to the bowl.
  3. Stir everything together until thoroughly combined. The mixture should be sticky but hold its shape.
  4. Fold in the chocolate chips until evenly distributed.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up.
  6. Scoop out the mixture using a cookie scoop or spoon and roll it into 1-inch balls.
  7. Place the energy bites on a baking sheet lined with parchment paper or a silicone mat.
  8. For firmer bites, chill for an additional 15-20 minutes (optional).
