Ingredients:
- 1 cup (90g) rolled oats (old-fashioned oats, not instant)
- ½ cup (120ml) peanut butter (smooth or chunky, your preference)
- ⅓ cup (80ml) honey (or maple syrup for a vegan option)
- ¼ cup (60ml) semi-sweet chocolate chips (or dark chocolate, or dairy-free)
- 2 tablespoons (30ml) ground flaxseed (optional, for extra nutrients)
- 1 teaspoon (5ml) vanilla extract (optional, enhances flavour)
- Pinch of salt
Instructions:
- In a large bowl, combine the rolled oats, ground flaxseed (if using), and a pinch of salt.
- Add the peanut butter, honey (or maple syrup), and vanilla extract (if using) to the bowl.
- Stir everything together until thoroughly combined. The mixture should be sticky but hold its shape.
- Fold in the chocolate chips until evenly distributed.
- Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up.
- Scoop out the mixture using a cookie scoop or spoon and roll it into 1-inch balls.
- Place the energy bites on a baking sheet lined with parchment paper or a silicone mat.
- For firmer bites, chill for an additional 15-20 minutes (optional).
