Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 cup pitted prunes, diced into sixths
  • 1/2 cup toasted pecans, chopped
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 3 tbsp whole milk or heavy cream
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan with butter or non-stick spray.
  2. Dice the pitted prunes into sixths to ensure even distribution throughout the batter.
  3. In a large mixing bowl, beat the vegetable oil, granulated sugar, and eggs until the mixture is pale and slightly fluffy.
  4. Stir in the milk and vanilla extract.
  5. Gradually fold in the all-purpose flour, baking powder, and salt using a wooden spoon, stirring until just combined.
  6. Gently fold in the diced prunes and chopped toasted pecans.
  7. Pour the batter into the prepared pan, smooth the top, and bake for 40-45 minutes until a toothpick inserted in the center comes out clean.
  8. While the cake is still hot, use a toothpick to poke holes across the entire surface of the cake.
  9. Whisk together the powdered sugar, milk or heavy cream, and vanilla extract until smooth, then pour immediately over the cake.
